FastBoot
This is the method used to Flash Rom's to the phone, access by pressing the space bar after pressing the power button, the screen should display some lettering, in this mode you can flash roms via WinFlasher or on command line with AndriodSDK tools, there is a thread explaining how

Clear Phone

Recovery Zip
This is a method used to update the phone using Zipped images of the boot and file system which you copy to the root of your SD card.
Again you need to boot the phone into FastBoot mode, then using a 'Recovery Image' to load the phone into 'Recovery mode', Again WinFlahser can help here, but there are others like everecovery or gbrecoveryRecovery EVE 4.0.1.5
Once you have booted into recovery mode, you can select 'install zip from SD card'
